As an apology
Potatoes Au Gratin
Note: I whipped this up the other night without any measuring. It should work fine as long as you don't overfill your casserole dish.
4-5 white potatoes
1/2 cup shredded cheddar
1 cup shredded parmesan
1 cup milk
2 tablespoons flour
2 tablespoons butter
Thinly Slice 4-5 good size potatoes, enough to fill the dish about 3/4 of the way up.
Make a bechamel sauce, and flavor it with tabasco and 1/4 cup cheddar cheese.
Place a thin layer of potatoes in the casserole, then salt and pepper them to taste. Cover lightly with parmesan. Repeat until you've used all the potatoes. Pour the bechamel over and top with remaining cheddar. Bake 400 until golden brown and bubbly, about 20 minutes.
Mashed sweet potatoes
4 medium sized sweet potatoes, peeled and cubed
1 tablespoon cumin
2 limes, juiced
1 ounce rum
Boil the potatoes. Drain them. Salt them lightly, then add them to a mixing bowl with the cumin, lime juice and rum. Mix until they are the desired consistency.
